A variety of colorful, mostly local and seasonal veggies individually steamed, a small scoop of quinoa, providing protein. The dressing is made with lots of fresh Mediterranean herbs and soaked pumpkin seeds. So good!

Serving size: one large entrée-sized meal or 2-3 side dishes. Dressing is approximately 1/2 cup.

Ingredients (organically grown unless marked with an asterisk): Veggies – Assorted (tbd). Dressing – extra virgin olive oil, raw apple cider vinegar, fresh parsley, dill and basil, raw sprouted pumpkin seeds, filtered water, coconut aminos, fresh garlic, and ground mustard seed.

Description

Place veggies and quinoa in piles in covered skillet over medium heat with a little water until heated through. Plate and top with dressing.
